After observing diminished cheek fat among children who sucked on popsicles, they became interested in “cold-induced fat necrosis” and began experimenting with treatments.

Soon thereafter, the Harvard scientists began to retrieve and study skin samples from their pediatric patients in the popsicle study and noticed inflammation in the fat, but not in the overlying skin. Discovering fat to be more sensitive to cold injuries than other tissues, they learned that they could freeze fat without harming the surrounding muscles, tissues, and skin cells, which freeze at a much lower temperature due to their higher water ratios.

The rest was history, as cryolipolysis became a novel treatment in noninvasive body sculpting — offering individuals a way to eliminate stubborn fat deposits without surgery. The process of decay after fat is frozen is intricate and somewhat mysterious. What is known is that frozen fat cells deteriorate and die a few days after cold treatments. Over the ensuing months, the immune system’s macrophages then clean up, digest, and discard the dead fat cells.
